Tammy's Kick Butt Chicken Quesadilla's

It's been an educational week here at Life & Food.  I had no idea everything that went into blogging.  So for right now my posts may be inconsistent - but trust me there's things happening in the background.
Now on to today's recipe.  This sucker is great when you're in a time crunch.  With a 5 minute prep time and only 5 minute cook time per quesadilla, you'll be out the door to soccer, hockey, or dance in a flash.

Tammy's Kick Butt Chicken Quesadilla's  




Tools:














An electric folding grill (panini press or George Foreman style)
Sharp knife
Cutting board
Pizza wheel
2 Spoons
Large Plate
Cheese grater (if you need to grate your cheese)


 Ingredients (for 4):

 










1 package flour tortilla's, small or large
1 package pre-cooked chicken breast ( like Lillydale)
1 cup Cheddar Cheese, grated
1 cup Mozzarella Cheese, grated
2 Green Onions, chopped
1 Tomato, cut into small cubes
4 Lettuce leaves, julienned
Sour Cream, to taste*
Salsa, to taste*

* I suggest to go easy on these two or you'll risk extreme soggy-ness, especially with the salsa.

I set up my little assembly line as the grill is preheating on max.











I do the assembly on the plate that it'll be served on.  Lay the tortilla down on the plate. Start with the chicken and only working on one half of the tortilla, then add the cheese, lettuce, tomato, green onion.  Finally, small dots of the salsa & sour cream.













Fold the other side over and slide it onto the grill.  Close the top and let heat until the cheese melts.











Cut into three pieces and serve.  You can add more sour cream & salsa on the side for dipping.  (Just a little tidbit, while you have one on the grill start making the next)
